Chinese Almond Cookie Recipe For CNY
Did you know that almond cookies are a must-have during CNY because they resemble gold coins and are said to bring good fortune? Good fortune or not, good health is surely a priority for us all. Here’s an easy-to-make, yummy yet healthier Chinese Almond Cookie Recipe from us.
Ingredients for Chinese Almond Cookies
Makes: 16-20 cookies

- All-purpose flour: 102g
- Alchemy Fibre™ For Flour: 18g
- Corn flour: 80g
- Butter (unsalted): 104g
- Water: 6g
- Salt: a pinch
- Icing sugar: 70g
- Almond flakes, toasted: 60g
- Almond extract, optional: ¼ teaspoon
Cooking Instructions

Step 1
Preheat oven to 160°C (fan assisted mode) or 180°C (non-fan assisted mode)

Step 2
In a mixing bowl, cream butter, icing sugar, salt, water and almond extract until smooth (1 min, low speed)

Step 3
Add sieved corn flour, all-purpose flour and Alchemy Fibre™ For Flour and mix for 30 sec at low speed

Step 4
Add toasted almond flakes and continue mixing until a soft dough is formed

Step 5
Roll dough onto baking paper. Cover with another baking paper and roll to 1 cm thickness

Step 6
Cut out using a cookie cutter and place onto lined baking tray

Step 7
Bake at 160C for 10 to 13 minutes
