It is a simple yet hearty recipe with a hint of spice and sourness from the Tom Yum flavour, perfect for all fried rice and Thai food lovers. This recipe allows you to use leftover rice that’s been refrigerated overnight for minimum effort but maximum flavour and better texture. Ingredients

Serves: 2-3 pax

Tom Yum Fried Rice Ingredients
1/4 cup seafood of choice
2 tbsp. tom yum sauce
1 egg, lightly beaten
1 tsp. fish sauce
1/2 tsp. light soy sauce
1 rice cooker cup rice, cooked with 1 heaped tbsp. (approx. 15g) Alchemy Fibre™ Powder Blend for Rice
1/4 cup frozen mixed vegetables
A dash of pepper

1 rice cooker cup rice, cooked with 1 heaped tbsp. (approx. 15g) Alchemy Fibre™ For Rice
1 egg, lightly beaten
1/4 cup seafood of choice
1/4 cup frozen mixed vegetables
Cooking oil
2 tbsp. tom yum sauce/paste
1 tsp. fish sauce
1/2 tsp. light soy sauce
A dash of pepper

To serve (Optional):
Fried eggs
Chilli sauce
Lime wedges

Instructions

1. In a medium pan, heat cooking oil over high heat and add in the egg to fry till just scrambled. Set aside. 

2. Add more cooking oil to the heated pan and fry the seafood (we used deshelled prawns) until the seafood is cooked. Add in mixed vegetables and stir fry for about 3-4 minutes. Add in tom yum sauce and mix well

3. Add in rice cooked with Alchemy Fibre™ Powder Blend for Rice, toss well to separate the rice grains. Add in the scrambled egg and toss until fully incorporated. Add in soy sauce and pepper to taste. Serve warm!

With a simple step of adding Tom Yum paste into your usual fried rice, it elevates the entire dish and allows you to change up the flavours of fried rice on days you are seeking alternatives. Especially since fried rice is so versatile, you can add in other ingredients or find substitutes for the ingredients listed above, to your liking. Cook away!
