Ingredients
  

  • 38 gram Alchemy Fibre BRAVO
  • 218 gram Plain Flour
  • 5 gram Salt
  • 4 gram Instant yeast
  • 228 gram Water
  • 30 gram Olive Oil
  • Flaky Sea Salt

Instructions
 

  • In a bowl, whisk together plain flour, salt, and instant yeast. Add the lukewarm water (~40°C). Using a rubber spatula, mix until the liquid is absorbed, and the ingredients form a sticky dough ball. Leave it covered at room temperature for 30 minutes. Round the dough
  • Refrigerate at least 12 hours/overnight
  • Line an 8x8" pan and add olive oil
  • Deflate and round the cold dough from the fridge and place in the pan ensuring all surfaces are oiled
  • Place each dough in each oiled pan
  • Flatten it and leave it covered at room temperature for 2 hours
  • Flatten the dough occasionally to fill the 8x8” pan (within the first 1 hour)
  • Drizzle olive oil all over the dough, sprinkle flaky sea salt and dimple the dough
  • Bake at 210°C top and 180°C bottom using a deck oven for 30 minutes or until golden brown
