  • 9 g Alchemy Fibre BRAVO
  • 53 g Tapioca Starch
  • 38 g Water


  • Boil water over the stove
  • Weigh and add hot boiling water into well mixed dry ingredients
  • Quickly mix well using a pair of chopsticks
  • Once cool slightly enough for hands to handle, hand-knead for 4 minutes
  • Ensure all doughs are kept covered with a wet kitchen towel to prevent drying out, portion and round the dough into 0.5 +- 0.05 spheres
  • Lightly coat the rolled shperes with tapioca flour to prevent them from sticking to one another
  • Either freeze the pearls at this stage and cook another day or cook them in a pot of water
  • Cook the pearls in boiling water for 15 minutes and then turn of heat and put on lid (stew) for 10 minutes
  • Cool the pearls in room temperature and soak the pearls in sugar syrup to keep
