Ingredients
- 25.6 g Alchemy Fibre WITTY
- 125 g Butter
- 120 g Maltitol
- 125 g Egg
- 102.4 g Cake flour
- 3.3 g Baking powder
- 2.0 g Lemon zest
- 10 g Lemon juice
Instructions
- Preheat convection oven at 190 degree C fan assisted mode
- Prepare Alchemy Fibre WITTY, cake flour and baking powder in a bowl and mix well
- Cream softened butter in a separate bowl using a paddle attachment
- Add maltitol and continue to cream until fluffy and light in colour
- Add about 1/3 of dry ingredients, mix for 10-15 seconds
- Add beaten egg in 4-5 additions and mix well between each addition
- Add all the rest of the dry ingredients and mix until just incorporated
- Add lemon juice and zest, mix well
- Pipe into baking pan
- Bake at 170 degree C for 25 minutes
