  • 75 gram Alchemy Fibre WITTY S40
  • 425 gram Noodle Flour
  • 1.5 gram Salt
  • 210 gram Water
  • 5 gram Alkaline Water


  • Mix noodle flour and Alchemy Fibre WITTY S40 homogeneously.
  • Mix salt, water and alkaline water to form a solution.
  • Pour solution into flour mix slowly while mixing.
  • Gather the dough crumbs to form a dough ball, let it rest for around 1 hour.
  • Flatten the dough and let it pass through a noodle sheeter, rolling and sheeting it until it forms a smooth dough sheet.
  • Flatten dough sheet until desired thickness (around 2 mm).
  • Cover both surfaces of dough sheet lightly with noodle flour or corn starch.
  • Pass dough sheet through noodle slitter to form noodles.
  • To cook, boil noodles for about 4 minutes.
