High Fibre Steamed Bun

Ingredients
- 36 gram Alchemy Fibre WITTY
- 144 gram Hongkong Flour
- 3 gram Instant Yeast
- 30 gram Sugar
- 7.5 gram Cooking Oil
- 1.5 gram Salt
- 72 gram Water
Instructions
- Dissolve sugar and salt in the water
- Add yeast and leave it for 1 minute
- Add oil followed by flour and Alchemy Fibre WITTY
- Using dough hook on stand mixer, knead at low speed for 6 minutes
- Wrapped well with clingwrap and rest for 10 minutes
- Portion into 50g dough balls, round and proof them for about 1h
- Steam for 10 minutes
- Cool in steamer (power off) for 1 minute prior opening
