  • 182.1 gram Alchemy Lower Carb Bun Mix
  • 360.6 gram Bread Flour
  • 10 gram Instant Yeast
  • 355.8 gram Milk
  • 38.6 gram Butter
  • 52.9 gram Crushed Ice


  • Add Alchemy Lower Carb Bun Mix, bread flour and yeast into a spiral mixer bowl
  • Mix well and add cold milk and crushed ice
  • Knead at low speed for about 4 minutes and high speed for about 6 minutes or until dough is smooth and strong
  • Add softened room temperature butter and knead at low speed for 2 minutes and high speed for 1.5 minutes or until dough is smooth and strong again
  • Check gluten network to ensure a good windowpane 
  • Round dough and proof for 1 hour or until double in volume
  • Portion doughs into 70g bun and round them
  • Proof, egg wash and bake at 180degC top and 160degC bottom using deck oven
