Ingredients
- 182.1 gram Alchemy Lower Carb Bun Mix
- 360.6 gram Bread Flour
- 10 gram Instant Yeast
- 355.8 gram Milk
- 38.6 gram Butter
- 52.9 gram Crushed Ice
Instructions
- Add Alchemy Lower Carb Bun Mix, bread flour and yeast into a spiral mixer bowl
- Mix well and add cold milk and crushed ice
- Knead at low speed for about 4 minutes and high speed for about 6 minutes or until dough is smooth and strong
- Add softened room temperature butter and knead at low speed for 2 minutes and high speed for 1.5 minutes or until dough is smooth and strong again
- Check gluten network to ensure a good windowpane
- Round dough and proof for 1 hour or until double in volume
- Portion doughs into 70g bun and round them
- Proof, egg wash and bake at 180degC top and 160degC bottom using deck oven
