You Will Need
130g cold butter, 1 egg, 60g chocolate chips (optional)
- Preheat oven to 180C (non fan assisted). Line a tray with baking paper. Set aside.
- In a large bowl, rub in cubed butter into the cookie mix until it resumes a breadcrumb texture. Mix in a beaten egg and other mix-ins as desired.
- Portion and roll the dough into 8g small balls. Place dough balls on the baking tray and bake for 15 minutes or until golden brown. Cool completely and store in an airtight container.
