You Will Need
30g melted butter, 30g Greek yogurt, 40ml vegetable oil, 100ml whole milk, 1 gg and 50g blueberries (optional)
- Preheat oven to 180C (non fan assisted). Line a 6-cup muffin pan with muffin liners. Set aside.
- Combine butter, yogurt, oil, milk then egg in a mixing bowl. SLowly add in muffin mix and whisk until just combined. Stir in mix-ins gently.
- Pour batter into muffin liners until 2/3 full and bake for 20 to 25 minutes or until tops are slightly golden brown. Cool for 10 minutes before serving.
