Reduced Sugar Strawberry Jam

Ingredients
  

  • 45.5 g Alchemy SweetFibre
  • 130 g Strawberry, frozen
  • 27.5 g Lemon juice
  • 47 g Sugar

Instructions
 

  • Chop strawberries into small chunks
  • Add chopped strawberries and lemon juice into a blender.
  • Blend till smooth.
  • Dry mix sugar and ESL 1 SweetFibre Powder
  • In a pot, combine the strawberry puree and sugar mixture
  • On a stove, bring the mixture to a boil at 1200W
  • Lower the heat to 800W and boil for 6 minutes, stirring continuously
  • Further lower the heat to 400W and cook for 2 more minutes
  • Turn off the heat and pour hot jam into a glass jar
  • Boil the jars in a heavy bottom pot for 10 minutes with lid slightly covering the jar
  • Close the lid and leave to cool
