  • 16 g Alchemy Fibre WITTY
  • 90 g Egg yolk
  • 20 g Maltitol
  • 64 g Cake flour
  • 4.2 g Baking powder
  • 100 g Coconut milk
  • 44.1 g Olive oil
  • 0.2 g Pandan flour
  • 0.3 g Pandan paste
  • 180 g Egg white
  • 60 g Maltitol
  • 2.1 g Cream of tartar


  • Preheat convection oven to 175 degree C fan assisted mode
  • Hand whisk egg yolk for 1 minute, add in maltitol and continue to whisk for 2 minutes. Add coconut milk, pandan flavour and pandan paste. Combine well.
  • Add in sifted cake flour, Alchemy Fibre WITTY and baking powder in 3 batches to the egg yolk mixture and mix well with a whisk
  • Add olive oil and incorporate well with a whisk
  • Prepare egg white meringue by beating egg white and maltitol in a stand mixer with whisk attachment until stiff peak
  • Fold in meringue to yolk mixture in 3 batches
  • Bake in preheated oven for 25 minutes
  • Invert the tin onto a cooling rack after taking it out of the oven
  • Let it to cool inverted for an hour before unmoulding
