Sugar Free Green Kaya

Ingredients
- 19.5 g Alchemy SweetFibre
- 50 g Egg
- 62.5 g Coconut milk
- 18 g Maltitol
- 0.5 g Pandan paste
Instructions
- Beat egg until well combined. To it, add maltitol and sweetfibre and combine well
- Over a bain-marie, combine coconut milk and pandan flavour together and heat over low heat
- When mixture comes to a small boil, remove the bain-marie from the heat
- To the egg mixture, add the coconut mixture gradually while stirring
- After it is well-combined, put the mixture back onto the bain-marie and stir until mixture thickens over low heat for about 10-20 minutes or to the desired texture
- Lastly, add the pandan flavour and remove from the heat to allow kaya to cool
- Store in an airtight container in the fridge
