Sugar Free Lemon Yuzu Cookies
High in fibre, sugar free with a crunchy texture
Ingredients
- 54 g Alchemy Fibre WITTY
- 216 g All purpose flour
- 4 g Baking soda
- 8 g Baking powder
- 90 g Butter
- 255 g Maltitol
- 4 g Vanilla extract
- 5 g Salt
- 50 g Egg
- 10 g Lemon powder
- 50 g Dried yuzu peel
Instructions
- Using Kitchenaid, cream butter and maltitol together using paddle attachment for 2 mins using 1-2 speed
- Add egg and vanilla essence. Mix for another 2 minutes at 2-4 speed
- Add half of the dry ingredients mixture and add for 20 seconds at 1-2 speed
- Add the remaining dry ingredients mixture and mix for another 20 seconds or until well mixed. Do not over mix.
- Roll into 6 grams circular dough and top with yuzu peel
- Bake at 170C fan-assisted for 10-12 minutes or until brown
- Cool completely before storing in airtight container
