Made Healthier: Making fried rice diet friendly

Simple yet wholesome. All you fried rice lovers out there, this dish is a staple that you should know like the back of your hand. The recipe for this dish is so simple that you don’t really need one, but here’s one anyway for posterity’s sake!

This recipe uses ingredients that are commonly found in your kitchen pantry so you can whip it up in a flash. Say it with us— Yang Zhou fried rice will never fail you.

Ingredients:

¾ cup mixed vegetables (e.g. peas, corn, carrots)
A pinch of salt and a dash of ground white pepper
1 tsp. vegetable oil
430g cooked white rice made with Alchemy Fibre
1 large egg, beaten 
5 large prawns, deshelled
½ cup ham/chicken or any meat of choice, sliced
½ tsp. light soy sauce

430g cooked white rice (alternatively, approx. 220g of uncooked rice if cooking from scratch)

1 heaped tbsp. (approx. 17g) Alchemy Fibre™ Powder Blend for Rice  

1 large egg, beaten 

5 large prawns, deshelled

¾ cup mixed vegetables (e.g. peas, corn, carrots)

½ cup ham/chicken or any meat of choice, sliced

1 tsp. vegetable oil

A pinch of salt 

A dash of ground white pepper

½ tsp. light soy sauce

Instructions

For the rice (uncooked) 

1.

Cook rice with Alchemy Fibre™ Powder Blend for Rice, then fluff rice grains and set aside to cool. Alternatively, you can use leftover rice (preferably 1-2 days old, refrigerated) and separate the rice grains for easier frying.

Dice your choice of meat, prawns and mixed vegetables. Season the beaten egg with some salt and pepper.

3.

Heat up vegetable oil in a non-stick frying pan on moderately high heat until hot. Add in meat, prawns, and stir-fry until they are slightly cooked, around 3 minutes. Add in the mixed vegetables and stir-fry for another 1-2 minutes.

4.

Add in cooked or leftover rice to the mixture and stir-fry slightly for 1 minute.

Make a well in the centre of the rice mix and pour in the beaten egg. Continue to stir-fry everything together for 1-2 minutes until well incorporated and the eggs are just set.

Yang Zhou fried rice is easily a comfort food for us. It’s such a versatile dish that you can create with any type of vegetables or meat of choice and it’ll always turn out delicious and beautiful with the pops of yellow from the egg!

Tip: You can add in another egg if you like it extra egg-y and fragrant.
